The variety, presentation, and quality of the
dishes was a great surprise for the panel of
judges which included Francisco Medina
Acosta, the department manager; Laura Ga-
rrochena Rivas, the Prevention Technician
in Andalucía I, Mª Pilar de Lara Durán, the
physician in charge of the Malaga Medical
Department.
The winning entry was called “Pisquilabis”,
an endive stuffed with capers, onion, avoca-
do, fish and eggs. Other tapas included: gu-
las with avocado and mango, pisto (Spanish
ratatouille) with beef loin; mussels Mediterra-
nean style; salmorejo (a thick gazpacho) with
ibérico jam; lima beans omelette, scrambled
eggs with green asparagus, stuffed piquillo
peppers, quail’s eggs croquettes; stuffed
avocado, and potato and tuna omelette.
