Cooking techniques keys to a healthy diet The way we cook food and how we eat it are key to heal- thy eating. • Before cooking, a selection should be made of the parts of the food that will be consumed, eliminating the inedi- ble parts. In this handling process, food and nutrient waste can be increased. • As far as cooking methods are concerned, the general recommendation is to use those that do not require a lot of fat, such as broiling, steaming, in papillote, sautéing, boiling or baking. • The different ways of cooking or preparing food, in ad- dition to providing sensory variety to the dishes, can fa- cilitate a flexible gastronomic offer of healthy foods. A key element for cooking is salt as a flavour enhancer. However, abusing of it in cooking as well as the high consumption of foods rich in salt (preserves, sausages, pickles or sauces), can be harmful to health, increasing the risk of suffering from high blood pressure, and thus the possibility of suffering cardiovascular diseases.
